How long have you been in the hospitality industry, and where did you start out?

I have been in the hospitality industry for 25 years, starting my career as a casual waiter in Canberra. Working in hospitality has provided me with the opportunity to work and travel extensively throughout Australia, New Zealand and Europe. Prior to moving to the Coffs Coast, I was managing a large corporate hotel in Melbourne.

What do you love the most about having your own café on the Coffs Coast?

I have always loved cooking, food and wine and am now able to combine my managerial experience with my passion for simple, fresh food in a beautiful location.

Tell our readers about the amazing menu you have at Wholly Cow.

The menu was developed with an element of fun and creativity, focusing on fresh ingredients and quality produce sourced from local suppliers. I love the fact that we can offer something different in First Avenue. The difference with our burgers and wraps is that I know exactly what goes into each one, as everything is made in house, including our homemade sauces. We prepare our own fresh beetroot and use fresh pineapple, as our philosophy is ‘there is nothing served here out of a can’.
Our breakfast menu is available all day and includes options from Eggs Benedict to our homemade Bircher Muesli. The emphasis of our menu is to keep it simple by letting the fresh ingredients speak for themselves. We also have several vegetarian and gluten-free options across the whole menu.

What would you say is Wholly Cow’s point of difference?

Our aim is to create a fun and inviting dining environment with friendly service, fresh food, great coffee and something a little different. We think we have achieved this from our retro inspired wallpaper to our Eames dining chairs, through to the fun names of our dishes on the menu.
We also offer organic and certified Fairtrade coffee, which is roasted locally in Bellingen. We think our burgers and wraps offer great value for money and by using fresh, homemade ingredients, you can taste the difference!

What do you have in store for the café over the next 6 months?

We have just introduced a second blend of coffee, which is also organic and Fairtrade, roasted by our coffee roaster, Amelia Franklin in Bellingen. We will continue to support Fairtrade coffee growers by using their products and try to encourage others to get Fairtrade karma!
We are very keen to continue supporting local suppliers and growers and will continue working with our coffee roaster to get the Fairtrade word out there!
Wholly Cow Café has provided the Coffs Coast with its very own gourmet burger place, which can rival those such as Grill’d in the cities! You don’t need to go to Sydney or Melbourne for good food!
We will also be selling our homemade relish, satay sauce and pesto in the near future – so watch this space!
